Dal doesn’t get the credit it deserves for fibre. In most Indian thali conversations, fibre gets assigned to the roti — because roti is the most visible, most-counted item on the plate. But whole chana, with skin, carries about 25.22g of fibre per 100g (IFCT 2017) — more than double the fibre of whole wheat atta. The dal sitting next to the roti could just be doing more fibre work. Which Dal or Pulse Has the Most Fibre?

Fibre differs considerably between whole pulses and split dals. IFCT 2017 lists whole Bengal gram at approximately 25.22g fibre per 100g dry weight. Whole black gram contains about 20.41g, whole moong about 17.04g, and rajma approximately 16.57–17.74g depending on the variety.

Among split dals, chana dal contains approximately 15.15g per 100g, urad dal 11.93g, masoor dal 10.43g, moong dal 9.37g and toor or arhar dal 9.06g.

These are raw, dry-weight composition figures. They are useful for comparing ingredients on equal terms, but they should not be presented as the amount in a cooked katori.

Why Pulses Are Often Overlooked as Fibre Sources

On an Indian plate, the roti is visible and countable: one, two or three. Dal is usually described only as a katori, even though the quantity and thickness of that katori can vary considerably.

Pulses are also commonly discussed first as sources of protein. That description is not wrong, but it can obscure their contribution to the meal’s fibre. Legumes—including lentils, kidney beans and chickpeas—are recognised dietary sources of fibre alongside whole grains, vegetables, fruit and nuts.

The better way to read the thali is not to award the fibre credit to either dal or roti. The grain, pulse and vegetables each add a different share.

How Much Fibre Does a Katori of Dal Actually Add?

These figures are per 100g dry weight, not per cooked katori. Cooking expands dals significantly with water, so a katori of cooked dal comes from considerably less than 100g dry. That said, a generous katori of prepared dal still contributes meaningfully to a day’s fibre from a relatively small serving — which is part of why the traditional Indian plate, with both roti and a dal alongside, was always a more balanced fibre approach than either alone. How Dal Fits Into a Fibre-Varied Plate
