Ajwain has a long-standing digestive reputation, but does a pinch in roti dough genuinely make a difference? Here’s what tradition, thymol research and the evidence can actually tell us.
If you have ever noticed your mother pinching a small fistful of ajwain into the dough before anyone else was even awake, you were watching one of those kitchen habits that gets passed down so naturally that most people never stop to ask why. Carom seeds in roti dough simply happened, and somewhere along the way they acquired a reputation for making the meal sit a little more comfortably.
Now that Khapli atta is appearing in more Indian kitchens, a genuinely useful question comes up: does adding ajwain to Khapli dough actually make it easier to digest, or is it mostly there for flavour?
The answer is more interesting than a simple yes or no. Ajwain has a long history of traditional use for digestive discomfort and contains compounds with genuinely interesting pharmacological activity. What we do not have is good evidence showing that the small amount of ajwain used in a batch of roti dough reliably prevents gas, bloating or indigestion in people.
So the grandmother habit is not nonsense. It just needs a little less certainty attached to it.
What Makes Khapli Wheat Different in the First Place?
Khapli wheat, also known as emmer wheat or Triticum dicoccum, is one of the older cultivated wheat species. It differs genetically and compositionally from the common bread wheat used for most modern atta, and its flavour and dough behaviour can feel noticeably different in the kitchen.
One claim that does need clearing up is gluten. Khapli is not a low-gluten substitute for ordinary wheat in any dependable nutritional sense. Research comparing ancient wheats such as emmer with modern common wheat has found that ancient wheats can contain as much or even more total gluten, although the proportions of different gluten proteins vary.
Khapli therefore remains a gluten-containing wheat. If you have coeliac disease, it is not a safe alternative. And if wheat regularly causes significant digestive symptoms, switching wheat varieties is not a substitute for finding out why.
Where Khapli does make a straightforward nutritional contribution is as a whole-grain wheat flour containing dietary fibre and protein. Aashirvaad’s current public information lists its Khapli atta as a fibre-containing whole-grain flour, although the company currently has two slightly different fibre figures in public materials — 10.7g and 11.4g per 100g — so I would confirm the current approved pack specification before putting a precise percentage into this article.
That fibre can contribute to an overall fibre-containing diet and bowel regularity. It does not, by itself, prove that Khapli will feel “lighter” or be easier to digest than another whole-wheat atta for every person.
What Does Ajwain Actually Do?
Ajwain, or Trachyspermum ammi, has been used traditionally across South Asia and parts of the Middle East for complaints such as flatulence, indigestion and abdominal discomfort. The seeds contain a volatile oil whose major constituent is thymol, along with compounds such as gamma-terpinene and p-cymene.
That traditional digestive reputation is not entirely without biological plausibility. Experimental studies have found antispasmodic effects from ajwain or thymol, including relaxation of smooth muscle in laboratory models. Older animal research has also reported increased gastric secretion and digestive-enzyme activity after ajwain was added to the diet.
But there is an important distinction here: evidence that a plant or isolated compound shows an effect in an animal or laboratory preparation is not the same as evidence that a pinch of the spice in dinner will produce a measurable digestive benefit in humans.
Human evidence is much thinner. A small randomised trial in people with functional dyspepsia found improvements with a herbal preparation containing ajwain together with celery, while another trial tested a combination of ajwain with other herbal oils. Those studies are interesting, but they cannot tell us what ordinary culinary quantities of ajwain in roti dough will do.
That makes the most accurate description something like this: ajwain has a credible traditional digestive use and some supporting experimental evidence, but its effect in an everyday roti has not been established in clinical trials.
So Does Ajwain Make Khapli Roti Easier to Digest?
Possibly for some people, but we cannot say that as a proven effect.
There is no study showing that Khapli + ajwain produces a special compounding digestive benefit, and neither ingredient should be described as universally easier on the stomach than its “conventional counterpart”.
What ajwain definitely changes is flavour. Its sharp, warm, slightly bitter aroma sits naturally with wheat, which is probably part of why the combination became so common in the first place. If somebody personally finds an ajwain roti more comfortable after eating it, that experience is perfectly valid; it simply should not be converted into a universal physiological claim.
The rest of the meal matters enormously too. A modest portion of ajwain-spiced roti with dal and sabzi is a completely different digestive proposition from several rotis beside a rich, oily curry. Eating pace, portion size, individual gut sensitivity and what else has been eaten that day can easily matter more than the half-teaspoon of spice in the dough.

How Much Ajwain Should You Add to Khapli Dough?
For flavour, about ½ teaspoon to 1 teaspoon per cup of atta is a perfectly reasonable kitchen starting point. This is a culinary quantity, not a clinically established “digestive dose”.
Ajwain has a powerful flavour, so more is not necessarily better. Too much can push the roti from pleasantly spiced into something closer to a medicinal lozenge.
Lightly crushing the seeds before adding them to the dough releases more of their aroma and distributes the flavour more evenly. Dry-roasting them briefly before crushing can mellow some of the raw sharpness and deepen the nuttier notes. Both are flavour techniques rather than proven ways of increasing a digestive effect.

Aashirvaad reports a Water Absorption Percentage of 73% for its Khapli atta under farinograph testing, but the amount of water your dough needs in an actual kitchen will still depend on flour quantity, humidity and how you like your rotis.
Does Ajwain Change the Texture of Khapli Rotis?
Not in any meaningful way that we can confidently attribute to its essential oil. The amount of oil naturally present in a teaspoon of ajwain is tiny relative to an entire batch of dough, so the claim that it makes rotis noticeably more pliable because the seeds are “slightly oily” is doing too much work.
Texture is far more likely to come down to water, kneading, resting, rolling and cooking. Ajwain is there mainly for flavour — and possibly, based on its traditional use and pharmacology, for a digestive effect that remains plausible rather than proven at culinary doses. That is enough of a job for one spice.
Who Might Enjoy Ajwain in Khapli Roti?
Anyone who already likes ajwain in parathas, puris or rotis has the easiest answer: use it because it tastes good.
People who occasionally experience mild gas or a sense of heaviness after meals may also prefer the flavour and traditional digestive association of ajwain. What I would avoid is promising that regular use will gradually “fix” bloating over time. Persistent bloating after wheat can have many causes, from meal size and fermentable carbohydrates to coeliac disease, IBS or other gastrointestinal conditions. If it is frequent or significant, it deserves more attention than a spice adjustment.
The same caution applies to blood sugar. Khapli should not be treated as a diabetes intervention simply because it is an ancient wheat, and adding ajwain does not turn a roti into one. People managing diabetes need to consider the amount of roti, the complete meal and their individual clinical guidance rather than relying on a grain-and-spice combination as a metabolic fix.
Where ajwain may genuinely help with Khapli adoption is much less medical and much more delicious: its assertive flavour can make a different wheat feel familiar. Khapli has a more earthy, grain-forward character than the atta some households are used to; cumin, ajwain, methi or other familiar seasonings can give that new flavour a recognisable place on the table.
A Simple Ajwain-Khapli Roti
For anyone who wants to try the combination without turning it into a digestive experiment:
For roughly 1 cup Khapli atta:
- 1 cup Aashirvaad Namma Chakki 100% Khapli Atta
- ½ teaspoon ajwain, lightly crushed

Mix the ajwain and salt through the flour before adding water. Knead into a soft, pliable dough and allow it to rest for around 15–20 minutes. Divide, roll and cook as you normally would.

There is real science behind some of ajwain’s traditional reputation: it contains thymol, and experimental research gives us plausible reasons why the spice became associated with digestive comfort. What we do not yet have is evidence that the amount sprinkled into roti dough reliably changes digestion in people. That doesn’t make the habit pointless. It just changes the reason for keeping it.
Ajwain gives Khapli roti a warm, familiar flavour. Some people may personally find that combination sits well with them. And if your grandmother was already putting it into the atta before sunrise, you certainly do not need to remove it simply because the clinical trial has not yet caught up with the spice box.
Keep the ajwain jar next to the atta if you like what it does there. Just let flavour and tradition carry some of the story too.
