Wednesday: Methi Thepla With Egg Bhurji or Tofu Bhurji

Make a 50:50 blend of Khapli atta and regular whole-wheat flour, add finely chopped fresh methi, turmeric, carom seeds, a little milk and a teaspoon of curd. Knead into a smooth dough, roll thin and cook quickly on a hot tawa. The theplas hold well, which makes them particularly useful for packed meals.
Pair them with a three-egg bhurji. If you prefer tofu, use a generous serving rather than assuming a small scattering supplies the same protein as three eggs; tofu protein varies considerably between products, so check the packet when protein tracking matters.

Thursday: Missi Roti With Hung-Curd Dip

Mix 60% Khapli atta with 40% besan, add finely chopped onion and green chilli, and knead with warm water. Besan is naturally gluten-free, but Khapli contains gluten, so the finished missi roti is not a gluten-free preparation.
Cook on a medium-hot tawa until the characteristic dark patches develop and serve with a thick hung-curd dip whisked with roasted garlic and cumin.
This is one of the easiest ways to increase the protein density of the flatbread itself. Besan, made from Bengal gram, contributes substantially more pulse protein than wheat flour alone, while the hung curd adds another concentrated source on the side.
Friday: Khapli Dosa With Sambar and Peanut Chutney
Approx. 16–22g protein per serving, depending on the batter and accompaniments
Blend Khapli flour into a fermented rice-and-urad batter, or make a quicker version using Khapli flour and curd or buttermilk. Ladle onto a hot tawa and spread into a thin disc until crisp at the edges.
Serve with a vegetable-loaded toor-dal sambar and roasted peanut chutney. Here the protein is distributed across the meal rather than concentrated in one ingredient: urad in the batter, dal in the sambar, peanuts in the chutney and Khapli in the dosa.
Fermentation changes the batter’s flavour, texture and composition, but once the dosa is cooked it should not be described as a probiotic food — the live microorganisms do not survive the heat.
Saturday: Moong Dal and Khapli Cheela With Hung-Curd Dip

Blend soaked yellow moong dal into a smooth batter and add Khapli atta in roughly a 1:1 proportion, along with grated ginger, green chilli and fresh coriander. Pour onto a lightly oiled tawa and cook until golden on both sides.
Serve with hung curd whisked with roasted cumin and fresh mint.
Moong and wheat bring different things to the batter, and that is more useful than trying to decide which one is “better”. The pulse raises the protein contribution substantially, while the grain gives the cheela body and adds its own protein and fibre. Sunday: Khapli Dalia Upma With Edamame

Dry-roast Khapli dalia in a little ghee until fragrant, then temper with mustard seeds, curry leaves and finely chopped vegetables — carrot, beans and bell pepper all work well. Add shelled edamame and enough boiling water to cook everything through. Cover and simmer until the dalia is tender but still textured.

The Bigger Point: Don’t Make the Atta Do All the Work
A higher-protein Indian diet does not have to involve replacing rotis with chicken breasts or adding protein powder to every second meal. It can begin with looking at the meal you already eat and asking where the protein is actually coming from.
