If 100 gm raw moong contains approximately 24gm of protein. Then my question is , is there is a difference in its protein content after those 100gm becomes sprouts . If yes how much.

According to IFCT (Indian food composition table) 100g of green gram dal/Moong Dal contains 24g of protein. However, the quality of the moong increases with germination & sprouting making it nutrient rich and easily digestible.
Studies have shown that sprouting does increase the protein content in pulses, the amount and/or percentage ranges between 12-36% which may depend on the duration of soaking.
