Dear Varun, Thank you for the quetsion

According to IFCT (Indian food composition table) 100g of green gram dal/Moong Dal contains 24g of protein. However, the quality of the moong increases with germination & sprouting making it nutrient rich and easily digestible.

Studies have shown that sprouting does increase the protein content in pulses, the amount and/or percentage ranges between 12-36% which may depend on the duration of soaking.
