1. Beetroot and Amla Soup (Basic)

Serving Size: 4
Time needed: 30 minutes

Ingredients:

  • Peeled and chopped beetroots (2 medium ones).
  • 2 medium amlas (Indian gooseberries), deseeded and chopped.
  • 1 tablespoon olive oil
  • 1/2 teaspoon Aashirvaad Iodized Salt or as much as one would want.
  • 1/4 teaspoon black pepper or to taste.
  • 4 cups water
  • Garnish of fresh coriander leaves (Optional)

Method:

  • Heat olive oil in a large saucepan on medium heat. Add chopped beetroots and amlas to the saucepan. Combine by means of stirring for a few minutes.
  • Add water, salt, and pepper. Boil, then lower the heat and simmer the mixture for 15 to 20 minutes, until the amlas and beetroots are tender.
  • Cook the soup, then add it to a blender and blend with an immersion blender until smooth, or transfer it to a blender.
  • Add flavour and add seasoning where necessary.
  • Pour the soup into the bowls and sprinkle with fresh coriander leaves, if you want to.

2. Classic Tomato Soup Recipe

Ingredients: 

  • 6 large ripe tomatoes, chopped
  • 1 medium onion, cut up
  • 2 cloves of garlic, chopped
  • 1 tablespoon of olive oil
  • 1 teaspoon of sugar (optional)
  • 1 teaspoon of dried basil
  • 1/2 teaspoon of Aashirvaad Iodized Salt, or more to taste
  • 1/4 teaspoon of black pepper, or to taste
  • 1/2 cup of homemade cream (optional, for a creamier version)
  • (Optional) Fresh basil or parsley for garnish

 Method:

  • Put olive oil in a big saucepan and heat it over medium heat. Add the chopped onion and garlic, and sauté for about 5 minutes, or until tender and fragrant.
  • Put the chopped tomatoes in the pot and simmer for another 5 minutes, stirring occasionally until the tomatoes start to break down.
  • Put in the water, sugar (if you want), dried basil, salt, and pepper. Bring the soup to a boil, then reduce the heat and simmer for 15 to 20 minutes to allow the flavours to blend.
  • Blend the soup until smooth using an immersion blender right in the pot or transferring it to a blender. Blend only half of the soup if you like it chunky.
  • Add the heavy cream to make the tomato soup creamy. Add more seasoning if needed.

Ingredients:

  • 1 huge head of broccoli, chopped up

  • Put olive oil in a huge saucepan and heat it over medium heat. Cook the onion and garlic for about 5 minutes, until tender.

  • Bring the soup to a boil, then reduce the heat and simmer for 20 to 25 minutes, or until the chicken is fully cooked.
  • Take the chicken out, shred it with two forks, and return it to the soup.
  • To serve, put the soup in dishes and top with fresh parsley. Have a piece of crusty bread with it!

  • 4 drumsticks

  • Pour in the water and add the bay leaf, black peppercorns, and salt. Get it to a boil.
