if we mix jaggery powder with water then what will be the shelf life of that perticular mixture

The storage life of jaggery mainly depends upon the atmospheric humidity and temperature. The major problem associated with jaggery storage is the presence of inverts of sugars and mineral salts, which being hygroscopic in nature, absorb moisture particularly during the monsoon season when the ambient humidity is high leads to spoilage of the jaggery materials.
During the process of creating solid jaggery, the liquid jaggery or semi liquid syrup is obtained as an intermediary product by evaporating filtered and clarified sugarcane juice. According to studies liquid jaggery can be stored for a period of 90 days in the refrigerator.
Mixing jaggery powder with water may not give you a good shelf life as jaggery high humidity and moister can lead to spoilage.
