grams is one katori?

One katori does not have a fixed weight in grams. Its capacity is measured in millilitres, while the food inside is weighed in grams. The answer changes with the bowl, the ingredient, whether it is raw or cooked, and how firmly you fill it.

ICMR-NIN’s 2024 dietary guidelines use reference katoris of 115ml, 155ml, 200ml and 360ml. These help explain the guideline tables; they do not standardise every bowl in an Indian kitchen. Measure your own katori at the level you normally fill it.

To find its volume, fill it with water and pour that water into a measuring jug. 200ml water weighs approximately 200g. That does not mean the same bowl holds 200g rice, sabzi or nuts. Each food needs its own conversion.

For a personal weight guide, borrow a kitchen scale if needed. Put the empty bowl on it, reset to zero, add your usual serving and note the weight and food. Repeat for the foods you use often. Check again if the recipe, utensil or filling method changes.

A mutthi is a useful handful, not a universal 30g measure. Measuring cups also vary: check the millilitres marked on yours. Use measuring spoons rather than assuming the spoon in your drawer holds a standard amount.

For nutrition calculations, match raw weights with raw-food data and cooked weights with cooked-food data. Multiply your portion’s weight by the nutrient value per 100g, then divide by 100. The aim is a useful approximation. If measuring food makes you anxious, skip it.

Nutrition advice can have a quiet problem. The gram amounts in dietary guidelines and the figures on a food label are difficult to use if you have no idea how your steel katori maps onto them. Which many of us don’t. And that’s not carelessness. Indian kitchens have always run on feel, familiarity and a good eye. The mutthi of dal. The katori of sabzi. The cup of cooked rice that’s really more of a generous scoop.

Understanding those measures can make nutrition information easier to use. It doesn’t require a kitchen scale permanently stationed next to the pressure cooker.

Why per-100g figures feel awkward in real life

Many nutrition figures are given per 100g, but some are per 100ml, per serving or per pack. Check the heading before doing the arithmetic.

FSSAI’s labelling regulations, regulation 5(3)(b)(iv), require nutrition panels to identify the serving amount in grams or millilitres and the number of servings in the package, subject to applicable exemptions. The manufacturer’s serving may differ from the amount you eat.

If a panel says “per 30g serving” and your portion is 60g, you have eaten two of those servings. If it says “per 100g”, use your portion’s weight to calculate its contribution. Those are different starting points. For a figure given per 100ml, use your portion volume in millilitres: multiply by the stated nutrient value, then divide by 100.

What does a katori actually hold?

A katori is a common serving vessel, but “small” and “medium” are not reliable measurements on their own.

ICMR-NIN’s Dietary Guidelines for Indians 2024, Annexure I and the accompanying guidance on printed pages 111–112, use this reference set:

Reference utensil

Capacity

Small katori, C9

115ml

Small katori, C8

155ml

Medium katori, C7

200ml

Large katori, C6

360ml

These are the vessels used for the guideline’s household measures. Your own bowl may hold a different amount, even if everyone at home calls it the medium katori. Annexure II gives food-specific household equivalents for the raw ingredients in its diet charts.

Volume tells you how much space is available. Weight depends on what fills that space. Approximately 200ml water weighs 200g in ordinary kitchen conditions. It does not follow that a 200ml bowl holds 200g of every food.

Thin dal and curd may be reasonably close to water as a rough starting point, but consistency and ingredients matter. Rice has spaces between the grains. Sabzi varies with the vegetables, gravy, oil and size of the pieces. A heap of chopped salad has its own gaps.

There is no dependable single gram conversion for all of them.

How to measure your katori once

Start with volume. Fill the bowl with water to your usual serving level, then pour the water into a measuring jug and read the millilitres at eye level. If you normally fill a bowl three-quarters of the way, measure that level rather than its capacity to the brim.

For food weights, borrow a kitchen scale if needed:

Put the empty, dry bowl on the scale and reset it to zero. This removes the bowl’s weight from the reading.

Add your usual serving of one food, filled as you normally serve it.

Note the food, its state and the weight: for example, “cooked rice, loosely filled, usual katori”.

Do the same for other foods you eat often. A rice measurement cannot stand in for dal or sabzi.

A small note in the kitchen can then become your personal reference. You are weighing the food inside the utensil, not treating the utensil itself as a fixed number of grams.

Usually one session gives you a useful starting point. Check again when the utensil, food, recipe or way of filling it changes. A thick dal and a thin dal deserve different entries.

The mutthi: useful, but not a universal 30g

A mutthi is a handful, often taken in a cupped hand. It is convenient for dry ingredients, although hand size, grip and the shape of the food change the amount. Keep your own method similar if you use it regularly.

A 2021 study by Brown and colleagues asked 120 adults in New Zealand to select different portions of nuts. Across the nut types studied, the median “handful” was 36.3g and the median “small handful” was 16.7g. That shows why a handful can be useful while still being an approximation. It does not establish a weight for every Indian adult’s mutthi, or for dal and poha.

ICMR-NIN’s 2,000 kcal vegetarian reference plate includes 35g nuts and seeds across the day. That is a reference amount, not a universal portion prescription or proof that your handful weighs 35g.

If you want a personal conversion, weigh your usual handful of the nuts, dal or grain you actually use. Use a bowl or spoon for wet and cooked foods, where a handful is awkward to reproduce.

A cup is only useful if you know which cup

“A cup” might mean a chai cup, a tumbler or a marked measuring cup. They do not necessarily hold the same volume.

For practical US recipe conversions, NIST uses approximately 240ml for a cup. Many metric measuring cups hold 250ml. Check the marking on your set and the convention used by the recipe.

Even with the same cup, different ingredients have different weights. King Arthur Baking’s ingredient chart, for its recipe measurements, lists:

Ingredient in that chart

Volume

Reference weight

Uncooked long-grain rice

½ cup

99g

King Arthur Premium 100% Whole Wheat Flour

1 cup

113g

The flour entry describes that product and measuring convention. It is not a universal “one cup of Indian atta” value. Scooping, spooning, levelling and compacting flour can change how much fits.

Use a chart that matches the ingredient and cup size. If you are using the familiar cup from your kitchen shelf, measure its volume first and calibrate the foods separately when you need a weight estimate.

Turning a household measure into a fibre estimate

Once you have an approximate food weight, the calculation is straightforward:

Nutrient in your portion = portion weight in grams × nutrient per 100g ÷ 100.

Say you have measured your usual raw rajma portion and found that it weighs 30g. The Indian Food Composition Tables 2017 list red rajma, entry B020, at 16.57g dietary fibre per 100g raw edible portion.

30 × 16.57 ÷ 100 = approximately 5g fibre from the uncooked beans.

That gives an ingredient-based estimate of the rajma’s contribution. Measure before soaking, then prepare and cook the beans thoroughly. Other ingredients add their own nutrients, and preparation can affect the finished dish.

A katori of rajma curry contains both beans and gravy. The raw-bean calculation helps you estimate what went into the recipe; it does not establish the fibre in every katori you serve.

For a batch, add the ingredients’ estimated contributions and divide by the portions actually served, allowing for how evenly the beans are distributed. For an estimate per 100g of finished curry, you also need the finished dish’s total weight. Water changes that weight.

Match raw weights to raw-food data and cooked weights to a matching cooked-food entry. IFCT contains many raw-food entries, but you should check the state named in each entry rather than assume every food database describes uncooked food.

Spoons: Volume is not the same as weight

Use the capacity printed on a measuring spoon. Common kitchen conversions are:

Measuring spoon

Common capacity

Teaspoon

5ml

Tablespoon

15ml

These are volume measures. A 15ml spoon does not hold 15g of everything. Ordinary teaspoons and serving spoons can differ from measuring sets, so check rather than assume.

As a food-specific example, USDA’s reference table lists a tablespoon of olive oil at 13.5g; several other cooking oils are around 14g per tablespoon. A level measuring teaspoon of granulated sugar is roughly 4g. Ghee’s consistency and how it fills the spoon can vary, so weigh your usual spoonful if you need its weight.

ICMR-NIN’s general guidance suggests restricting cooking oils to about 25–30g a day. For oils weighing around 13.5–14g per tablespoon, that is approximately two 15ml measuring tablespoons across the day’s dishes. Individual requirements and prescribed diets vary.

Oil added to a shared pot is shared across its portions. Two tablespoons in a four-portion dish are not two tablespoons in each person’s serving.

A useful approximation is enough

Measuring without a scale at every meal will never be perfectly precise. Accept that upfront. A consistent estimate can still make a food label easier to understand.

Your katori, mutthi and repurposed cup can remain part of the kitchen. Knowing what they hold gives you a better way to use the information you read.

If weighing or measuring food makes you anxious, or you have a history of disordered eating, skip the exercise and speak to a doctor or dietitian.
