>Sources

Quick Answer

A2 refers to a form of milk protein, while ghee is almost entirely milk fat. It does not establish a digestive advantage for the finished ghee. Bilona describes a method; desi cow and Gir describe the milk source; grass-fed describes feeding; and danedaar describes texture. These can matter for flavour, craft or your buying preferences, but the label alone does not prove the ghee is healthier. Check the maker’s details, FSSAI licence or registration number, dates, nutrition panel and packaging. Pay extra for qualities you value and can verify.

Why Ghee Labels Multiplied

Not long ago, ghee came in two kinds: homemade, and the tin from the shop. Today there’s a premium shelf, and the labels on it have become a vocabulary of their own. A2. Bilona. Desi cow. Gir cow. Grass-fed. Danedaar. The prices can be striking.

Some of those words describe something real: a traditional method, a particular breed, a texture. What they don’t establish on their own is a health difference. It’s worth taking them one at a time.

None of this is an argument against spending more on ghee you love. Flavour, tradition and supporting particular farmers or breeds are all perfectly good reasons to pay a premium. The thing worth avoiding is paying extra for a health benefit that hasn’t been demonstrated.

A2 and the Milk Protein Question

A1 and A2 refer to versions of beta-casein, one of the proteins in milk. Which version a cow produces depends on its genetics; A2 is common in Indian indigenous cattle. That helps explain why ‘A2’ and ‘desi cow’ so often appear on the same label.

The debate about whether A2 milk is gentler on digestion concerns milk containing that protein. Ghee, though, is almost pure fat. Most of the water and non-fat milk solids are removed during clarification; FSSAI’s ghee standard requires at least 99.5% milk fat.

‘Made from A2 milk’ can describe the starting material. It does not, by itself, demonstrate that the finished ghee is easier to digest. Research on drinking A2 milk cannot simply be transferred to a spoonful of ghee.

There is a regulatory history behind the confusion. FSSAI issued an advisory on A1/A2 labelling in August 2024, then withdrew it on 26 August 2024 for further consultation. That withdrawal should not be read as confirmation of a health benefit.

One distinction matters regardless of the label: very little protein is not the same as guaranteed protein-free. Ghee can retain traces of milk protein. If you have a milk allergy, avoid ghee unless your allergy specialist has specifically advised otherwise. A2, bilona and homemade labels do not change that advice.

Desi Cow and Gir Cow

‘Desi cow’ broadly describes indigenous cattle; Gir is a particular indigenous breed. There can be value in supporting these breeds and their farmers, and some people prefer ghee from particular herds.

Milk source, feed and processing can affect flavour, colour and fat composition. But a difference measured in a laboratory is not automatically a demonstrated health advantage for the person eating it. There isn’t enough good human evidence to recommend paying more for desi or Gir cow ghee for better health.

If a particular breed matters to you, ask the maker how the milk is sourced and traced. The breed name on the front is a claim to check.

Bilona

Bilona is the traditional method: milk is set into curd, the curd is churned to separate butter, and that butter is clarified into ghee. It’s an old and skilled process, and cultured preparations can develop a distinctive depth of flavour that many people love. The time and work involved can be part of what you’re paying for.

It does not follow that bilona always needs more milk than another method. Yield depends on the milk’s fat content and how efficiently that fat is recovered.

A 2025 laboratory study comparing curd-butter, cream-butter and fermented cream-butter methods found differences in aroma compounds, without a significant difference in fatty-acid composition due to processing. It examined ghee from two cow breeds, not health outcomes in people. Choose bilona for the flavour and craft you value; the method alone does not establish that it is healthier.

Grass-Fed

What a cow eats can shift the fat composition of its milk. In research comparing pasture and indoor feeding, pasture feeding increased some fatty acids, including alpha-linolenic acid, an omega-3 fat. That is a real compositional effect.

But the amount you get depends on the product and the quantity you eat. A different fat profile does not, by itself, show that an everyday spoonful of grass-fed ghee improves health. It remains a concentrated milk fat with substantial saturated fat.

If grass-fed matters to you, look for a clear explanation of the feeding system and how the claim is verified. The words alone do not tell you how much pasture was involved.

Danedaar

Danedaar, the grainy, granular texture of ghee, has long been prized in Indian homes. It’s a real and pleasing characteristic.

The grains form as milk fat crystallises. Research on ghee’s grainy texture shows how fat composition and crystallisation behaviour affect the result; cooling and storage conditions matter too. Texture is not a reliable test of purity on its own, and smooth ghee isn’t automatically inferior.

The Other Words on the Jar

A few more terms turn up regularly on premium ghee, and they vary in what they actually tell you.

‘Pure’ and ‘traditional’ have conditions attached. Under FSSAI’s advertising and claims rules, ‘pure’ is restricted to single-ingredient foods meeting specified conditions, including no added ingredients and controls on contamination. ‘Traditional’ must refer to a recipe, formulation or method that has existed substantially unchanged for at least 30 years. Neither word means a product has a proven health advantage.

‘Vedic’ and ‘hand-churned’ need a clear explanation of what the maker actually does. They are not, on their own, nutrition credentials.

‘Organic’ is regulated too. For certified packaged organic ghee, look for the Jaivik Bharat logo and the relevant certification mark, such as India Organic under NPOP or PGS-India. Certification concerns production standards; it does not establish that the ghee is healthier to eat. There are specific exemptions for certain small producers selling directly to consumers.

‘Cow ghee’ and ‘buffalo ghee’ describe the milk source. If the source matters to your preference, look for a clear declaration and sourcing information rather than assuming it from the colour.

A useful rule of thumb: the more a word sounds like a promise, the more it’s worth asking what, exactly, is being promised, and whether anyone has checked.

What Actually Tells You Something

The plain details on the pack deserve as much attention as the premium words on the front. Use FSSAI’s labelling requirements as a starting point and check:

The FSSAI logo and licence or registration number, along with the manufacturer’s or packer’s name, address and consumer contact details.

The batch or lot number, manufacture or packing date, expiry or use-by date, and storage instructions.

The milk source and processing information behind any source or method claim you are paying for.

The nutrition panel, especially the serving size, energy, total fat and saturated fat.

An intact seal and undamaged packaging, from a seller and maker you trust.

An FSSAI licence or registration identifies the food business; it is not an endorsement of every health claim on a jar. Colour, aroma, flavour and texture help you judge what you enjoy, but they cannot establish the absence of adulteration.

Read the Nutrition Panel Too

To put the quantities in perspective, these are rounded reference values for ghee from the National Institute of Nutrition, with a 5 g amount calculated from them.

Nutrient

Per 100 g

Per 5 g

Energy (kcal)

900

45

Total fat (g)

100

5

Source: ICMR–National Institute of Nutrition, Nutritive Value of Indian Foods, revised edition, Table 1, p. 58. Ghee is rich in saturated fat; WHO advises that most dietary fat should be unsaturated, with saturated fat providing no more than 10% of total energy. The ghee on your roti counts alongside the oil, butter and other fats in the rest of the day.

Is There a Gut Angle?

An honest, modest one. Ghee’s fatty acids have attracted research interest, including butyric acid, which is present within milk fat. Its form in the body, butyrate, is used as fuel by cells lining the colon.

Researchers have studied butyrate’s role in maintaining the intestinal barrier and regulating immune responses in the gut. Those particular studies used cell and mouse models. They do not show that eating ghee, or choosing a premium type, improves digestion or immunity.

Much of the butyrate used in the colon is produced there by bacteria fermenting fibre and resistant starch. Fibre-rich plant foods help provide that material. The biology of butyrate is not a reason to increase your ghee portions.

Ghee also usually contains very little residual lactose, so a small amount may suit some people with lactose intolerance. Tolerance varies; an A2 or bilona label doesn’t guarantee comfort. Lactose intolerance is different from milk allergy, for which ghee should be avoided unless an allergy specialist has advised otherwise. And a heavy hand with any fat can make a rich meal feel uncomfortable.

My Advice When the Budget Matters

Ghee has been part of our Indian diet for ages. Traditionally, our Nani, Dadi and mothers made it at home. Over the years that has changed: making ghee takes time, and in a busy life it isn’t always easy to do regularly. That’s why some of us opt for ready-made ghee.

Whether you buy it at a small neighbourhood shop or a fancy supermarket, an expensive jar is not automatically a healthier one. I would look at the maker, the milk source and processing information, the pack details, and the colour, aroma, texture and flavour I prefer. I would check the FSSAI licence or registration rather than look for an ‘FSSAI-approved’ health promise.

If an affordable ghee from a trustworthy maker meets your requirements and preferences, why stretch the budget simply for words such as ‘rich’ or ‘premium’? There is no established health reason to do so.

If you can make your own, that can be a lovely option too. You can choose the milk or butter and follow the process yourself. Keep collected malai refrigerated and use clean utensils. Homemade ghee’s quality still depends on the ingredients, preparation and storage; making it at home does not automatically guarantee purity or better nutrition.

The Honest Takeaway

Most premium ghee labels describe source, craft, feed or texture. A2 concerns a milk protein, most of which is removed when ghee is made. None of those labels, on its own, establishes better health.

If you love the flavour of bilona or desi cow ghee and the price suits you, enjoy it. If not, well-made ghee from a licensed or registered, trustworthy maker can serve your kitchen perfectly well. There is no need to turn the everyday jar into a test of how well you feed your family.

Sources

FSSAI.
