It is more concentrated in fat and calories, tolerates higher cooking temperatures and contains very little lactose. Butter suits spreading, finishing, baking and gentler cooking. Both are high in saturated fat, so portions matter. Ghee’s butyrate content isn’t a reason to eat more of it, and it isn’t a safe substitute for butter if you have a milk allergy.

One Is Simply the Other, Cooked

Many Indian households understand this relationship intuitively, because they have made both. Malai skimmed from boiled milk is collected and kept refrigerated, cultured, churned into makhan, and the makhan slowly cooked until the milk solids brown and settle and the fat turns clear and golden. That clear fat is ghee.

So ghee is butter with two things removed: the water, which evaporates, and the non-fat milk solids, which are separated and strained away. That process explains nearly every practical difference between them.

It’s useful to know, because the question usually comes up for a reason. Some people switch from ghee to butter believing butter is lighter; others switch from butter to ghee because they’ve read that ghee is the healthier, more traditional fat. Understanding what actually changes makes the choice simpler: it comes down to how you’re cooking, what your stomach tolerates and how much of either you’re using.

Branded ghee follows the same broad principle at scale. Aashirvaad Svasti Pure Cow Ghee, for instance, uses a SloCook process that ITC describes as developing its aroma and granular, daanedaar texture.

Ghee and Butter Side by Side

What changes

Butter

Ghee

Fat

About four-fifths fat; much of the rest is water

Almost entirely milk fat

Lactose

Small amounts remain

Usually only very small residual amounts

Milk protein

Present

Traces can remain; unsuitable for a milk allergy

Cooking

Suits gentle sautéing, finishing and baking

Better suited to higher-heat cooking and tadka

Storage

Usually refrigerated; follow the pack

Keeps longer when properly made and stored; follow the pack

Flavour

Creamy and mild

Nutty, rich and aromatic

Nutritionally, Closer Than You’d Think

Gram for gram, ghee carries more fat and energy because there is very little water taking up space. Both contain dietary cholesterol, and most of their fat is saturated.

The NIN reference figures below show the difference. Values are per 100 g, using the rounded composition figures in Nutritive Value of Indian Foods; they aren’t suggested serving sizes.

Nutrient per 100 g

Cow ghee

Butter

Energy (kcal)

900

729

Fat (g)

100

81

Source: ICMR–National Institute of Nutrition, Nutritive Value of Indian Foods, revised edition, Table 1, p. 58. For a particular product, use the current nutrition label.

Neither needs to be treated as a villain. A little ghee on a roti, or on dal or khichdi, can fit into a balanced diet. But the overall mix of fats matters too: WHO advises that most dietary fat should be unsaturated, with saturated fat providing no more than 10% of total energy. Nuts, seeds and suitable unsaturated cooking oils have a place alongside the ghee or butter you enjoy.

Butter and ghee can carry fat-soluble vitamins A, D, E and K, particularly vitamin A. The amounts vary with the milk, the animal’s feed, processing and storage; heating can also reduce some vitamins. Ghee’s greater fat concentration doesn’t guarantee that every vitamin will be higher than in butter.

Dairy fat also contains CLA, or conjugated linoleic acid, and small amounts of essential fatty acids such as linoleic and alpha-linolenic acids. You may hear vitamin K2, a form of vitamin K, discussed alongside these nutrients. Amounts vary, so claims that a spoonful of ghee is a rich source of K2 or a dependable way to meet all your fat-soluble vitamin needs need care. These components aren’t a reason to increase your portions.

The Gut Question and Butyrate

Ghee is often marketed as good for the gut because it contains butyric acid. Its form in the body, butyrate, is a short-chain fatty acid used as fuel by cells lining the colon.

Butter and ghee both contain this fatty acid, mainly as part of their milk fat. Removing water concentrates that fat, so ghee made from the same butter can contain more per gram. But eating it isn’t the same as producing butyrate where your colon uses it.

Much of the butyrate that nourishes colon cells is made in the colon itself, by gut bacteria fermenting fibre and resistant starch. Fermentable fibre from plant foods, including dal, vegetables and whole grains, helps provide the material for that process. So if butyrate is the goal, pay attention to the dal under the ghee, too.

Where ghee can differ from butter for your gut is lactose tolerance. Laboratory analysis has found very low residual lactose in ghee. Butter is already relatively low in lactose, but ghee generally contains less. If you have lactose intolerance, a small amount may suit you; your own tolerance and the product still matter.

Milk allergy is different. Ghee can retain traces of milk protein. People with a milk allergy should avoid both butter and ghee unless their allergy specialist has specifically advised otherwise. Don’t test your tolerance at home.

Large amounts of either fat can also make a meal feel heavy for some people. If rich meals tend to leave you uncomfortable, a smaller amount may be more useful than switching between butter and ghee.

In an Indian Kitchen

For tadka and higher-heat cooking, ghee is the more practical choice of the two. Removing the milk solids gives it a higher smoke point than ordinary butter. Butter’s solids can brown and then scorch when the pan gets too hot.

Butter also works well for a gentle sauté on low to moderate heat, or added towards the end of cooking. A knob melting into pav bhaji or dal makhani, or spread on a hot paratha, earns its place because creaminess is the point.

For baking, butter is often the better fit for a recipe designed around it: its water and milk solids affect texture and browning. Replacing it with ghee may change the result, so follow a recipe tested with the fat you’re using.

For keeping, ghee has the advantage of very low moisture. Store it in a clean, dry, tightly closed container away from heat and light, use a dry spoon and follow the pack’s storage and use-by instructions. Homemade ghee’s keeping quality depends on how thoroughly the water and solids have been removed; don’t assume every batch will keep for months on a warm counter.

One practical note applies to both: don’t let the fat smoke. Ghee’s higher smoke point doesn’t make it immune to deterioration, and repeatedly heating the same fat for deep-frying isn’t a good habit.

How Much Ghee Is Reasonable?

For a generally healthy adult, I’d consider one to two level teaspoons, roughly 5–10 g a day, a practical amount that can fit into a balanced diet. That is part of your day’s total added fat, including cooking oil, butter and the fats used in snacks or sweets. It is a guide, not an amount everyone needs to add.

If someone needs extra energy for weight gain, two to three teaspoons may fit a wider meal plan, depending on their needs. Ghee adds calories; it doesn’t replace the protein and other nutrients that a nourishing diet needs.

If you’re following a calorie-restricted diet, living with obesity or have a history of cardiovascular disease, be more deliberate about the amount of ghee or butter you use. A dietitian can help you fit it to your energy needs, health conditions and any prescribed limits on saturated fat or cholesterol. Needing less doesn’t mean you have to lose all the flavour: a small amount used for finishing can still be satisfying.

Two Questions People Ask Next

Homemade or Store-Bought?

Homemade ghee from saved malai is a pleasure and a thrifty habit. Keep the malai refrigerated while you collect it, and use clean utensils. The leftover browned solids, sometimes eaten with a little sugar or mixed into atta, are a small treat in many households; they still contain milk solids.

Store-bought ghee offers consistency and convenience. With either, choose a source you trust and store it properly.

You’ll also see ghee sold as ‘bilona’, which usually describes churning cultured milk or curd into butter before clarifying it. It’s a long-standing method, and many people prefer its flavour. Choose it for taste, tradition and a maker whose process you trust; the name alone doesn’t establish a health advantage or change the advice on portions.

Cow or Buffalo?

Cow ghee is usually yellow because of carotene pigments in the milk fat; buffalo ghee tends to be paler. Flavour varies with the milk and how the ghee is made. Both are almost entirely fat, so buffalo milk’s higher fat content doesn’t mean that finished buffalo ghee is automatically much fattier than cow ghee.

These are NIN reference values per 100 g. Vitamin A is shown in international units (IU), as reported in the original table.

Nutrient per 100 g

Cow ghee

Buffalo ghee

Energy (kcal)

900

900

Fat (g)

100

100

Vitamin A (IU)

2,000

900

Source: ICMR–National Institute of Nutrition, Nutritive Value of Indian Foods, Tables 1 and 2, pp. 58 and 67. Use ghee for tempering and higher heat; use butter where you want creaminess, or where a baking recipe calls for it. Keep an eye on the amount of either.

Neither is a gut-health shortcut. The fibre on the plate helps feed your gut bacteria.
