In practice, a great deal of it is decided earlier, somewhere far less romantic: the supermarket aisle, the kirana counter, or, increasingly, a delivery app on your phone.

If food isn’t in the house, it’s much harder to make it your nine-at-night meal. If it is in the house, it’s very easy. That simple fact does more work than most people give it credit for.

The house has a say in what you eat

Researchers call what’s present and reachable in your kitchen the “home food environment”. In a US study of adults in a community with low incomes and limited food access, people who perceived their home food environment as healthier also reported better overall diets. It was an observational snapshot, so it cannot tell us that changing the contents of a fridge will, by itself, change someone’s diet. But it gives us a useful place to look.

This isn’t really a willpower story. It’s an architecture story. Stock up on foods you enjoy and can readily turn into meals, and the easy choice for the next several evenings is already there. Otherwise, you may spend the week negotiating with a fridge that isn’t on your side. Of course, the fridge also reflects your budget, time and access to shops. A list can help within those limits; it cannot make them disappear.

For a gut-friendly grocery list, start with ordinary sources of dietary fibre: wholewheat atta or oats, dal or beans, fruit and vegetables, and nuts or seeds if they suit you. Fibre helps with digestion and preventing constipation. You don’t need a basket full of special “gut health” products to include it.

Every trip is a small unglamorous vote

What a household buys offers a useful, if incomplete, window into what it eats. Researchers use tools such as the Grocery Purchase Quality Index to assess how closely purchases align with dietary recommendations. In one study of 209 US adults, the quality of household grocery purchases was moderately related to individuals’ self-reported diet quality.

Moderately is the word to keep. A household basket is shared, some food gets wasted, and some meals come from elsewhere. A shopping record is a clue, not a complete account of anyone’s diet.

None of this needs to feel clinical. It simply means the list — or the absence of one — is doing real work before a single meal is cooked.

The shop was never neutral

The store layout is not an accident. Eye-level shelves and end-of-aisle displays put some products directly in your path. Snacks at the checkout give you another chance to add something you didn’t come in for. Layouts vary, but placement is part of retail design, and it’s worth noticing, the same way it’s worth knowing a road has a camber. Research in English supermarkets has tested how moving produce and removing checkout confectionery can change store sales.

The encouraging side of this: the same architecture can work in your favour. In a small US randomised trial involving 50 adults experiencing food insecurity, people given a nutritionally balanced, prefilled online cart could change its contents before ordering. Compared with people given nutrition information and an empty cart, they bought foods containing less sodium and saturated fat, among other improvements. This was an early study of purchases, not proof of lasting changes in diet or health. Still, defaults can matter.

You can borrow that idea for your own kitchen by deciding, in advance, what your “default” snacks and staples are, rather than deciding fresh, hungry, at seven in the evening.

What quick commerce has quietly changed

Here’s the modern twist. Grocery shopping often had built-in friction: a planned trip, a list, a drive or a walk, time to reconsider. Rapid delivery apps can remove much of it. Where late-night delivery is available, the aisle is in your pocket, with little between the craving and the cart except a few taps.

I don’t think this is automatically bad. It’s also how sensible staples get restocked without a wasted evening. But it’s worth noticing how little pause there may now be between wanting something and having it. If your quick-commerce cart looks nothing like your grocery list, that gap is worth a look. A small, deliberate trick: save non-urgent items to your cart and come back later — perhaps in an hour — to see whether you still want them. The hour isn’t a scientifically established cut-off. The point is to give yourself a pause.

There’s also a quieter, very Indian version of this shift worth naming. A kirana visit can come with its own pauses: a familiar shopkeeper who mentions what’s fresh, a short walk, a conversation about the month’s bill. An app offers a different experience. It isn’t a reason to avoid it; it’s a reason to bring a list with you, even when you aren’t leaving the sofa.

A claim I checked and decided not to use

You’ve probably seen the advice “never shop on an empty stomach,” often attached to a precise statistic about how much more hungry shoppers buy. One widely cited paper about hungry grocery shoppers was formally retracted in 2018, after its results could not be verified. It should not be used as evidence.

So I’ll give you the modest version instead: hunger can make energy-dense foods look more appealing, as a small laboratory study found. That is different from proving that everyone buys a particular percentage more groceries. If you’re hungry, eating something before you shop is a reasonable practical step. I just won’t hand you a precise percentage I can’t stand behind.

The list itself remains a useful tool. Write it before the app is open, and before the aisle has a say.

Three things worth knowing by name

Home food environment

The food that’s present and accessible in your house: what’s on the counter, in the fridge, within easy reach. It is associated with what people eat, alongside factors such as cost, time and preferences. Having the ingredients available makes a planned meal easier to put together.

Choice architecture and the default effect

Choice architecture is the way options are arranged. Shelf position, checkout displays and an app’s ordering of products can all influence what catches your attention. A default goes a step further: it is already selected unless you change it. A recommendation you still have to add to your cart is a suggestion, not a default.

Grocery Purchase Quality Index

A research tool for assessing how closely household food purchases align with US dietary recommendations.
