A varied spread can cover several needs: include a mild dish, a fresh or steamed option, a dal or pulse dish, and clear choices for vegan guests and anyone following a confirmed fasting practice. Allergies need a stricter plan and may require separate preparation. Confirm ingredients, clean equipment, prevent cross-contact and be honest if you cannot do this reliably. Every guest should know what they can eat without having to explain their plate at the table.

Good Hosts Have Always Planned Around Their Guests

Accommodating guests is not a modern rule imposed on Indian hospitality. Grandmothers who remembered that one relative did not eat onion, another was fasting on Thursdays and a particular uncle could not manage too much chilli were already doing it. They simply kept the whole guest list in their heads.

With Diwali gatherings ahead, several needs may come to one table: a Jain colleague, a relative keeping a fast, a cousin with a nut allergy, a parent with diabetes and a vegan teenager. A little planning keeps the warmth of mehmaan-nawazi while taking the guesswork out of the meal.

Diwali Menu Planning Starts with Asking Ahead

The hardest part is often simply asking. Keep it casual and ask early enough to change the shopping list.

On the family or friends’ group chat: ‘Planning the menu for Diwali. Is anyone fasting, allergic to anything, or avoiding particular ingredients? Message me privately if that’s easier.’

To an individual: ‘Koi cheez hai jo aap nahi khaate?’ It is familiar, direct and easy to answer.

If an elder tends not to speak up, ask them privately or check with someone close to them rather than assuming they will manage the food.

Many guests appreciate being asked in advance. It lets them answer without having to announce their needs while everyone else is serving themselves.

Plan for Common Needs but Ask What Each Guest Follows

Religious practices, medical diets and household preferences vary. Treat the examples below as conversation starters, not a rulebook.

Jain guests: Many avoid root vegetables such as onion, garlic, potato and carrot. Some also avoid food after sunset. Ask which ingredients they avoid and what time they need to eat. A no-onion-no-garlic dish is not automatically suitable if it still contains potato or another ingredient the guest avoids.

Guests who avoid onion and garlic: Prepare their dish without these ingredients from the start. Picking out visible pieces later does not remove the flavouring or cooking liquid.

Guests observing a vrat or fast: Depending on family and tradition, permitted foods may include fruit, sabudana, kuttu, singhara, rajgira, sama rice, potatoes, dairy and sendha namak. Practices vary, so confirm the actual fast, permitted ingredients and when the guest plans to eat instead of labelling a dish ‘vrat-friendly’ on assumption.

Guests with diabetes: Offer a normal range of choices, including vegetables, pulses, savoury dishes, unsweetened drinks and whole fruit, without putting a health label on the plate. Whole fruit still contains carbohydrate, and the guest’s own treatment plan should guide what and how much they choose.

Vegan guests: Check the whole dish, including the tempering, garnish and packaged ingredients. Cooking in oil does not make a dish vegan if it contains ghee, butter, paneer, curd, cream, milk powder or another dairy ingredient. Vegans also avoid eggs, honey and other animal-derived ingredients.

Children and older guests: A mild, soft option can make the meal easier. Set aside a portion before adding extra chilli, while keeping dietary suitability and allergy safety as separate checks.

If sabudana is part of a guest’s fasting menu, remember that it is mainly starch and is often prepared with peanuts or dairy. Happy Tummy’s guide to sabudana and gut health explains where it fits and what the rest of the plate needs to provide.

Food Allergies Need a Separate Safety Plan

A food allergy is not a preference. Even unintended traces can be dangerous for some people, and Indian cooking can hide nuts, sesame, dairy or wheat in gravies, tempering, sweets, garnishes and packaged masalas. Cross-contact means an allergen gets into food that should not contain it.

Ask which foods the guest must avoid and what precautions their allergy plan requires.

Check every ingredient used in the preparation, including packaged products, garnishes, sauces, seasonings and cooking fats. Keep the original packaging and labels readily available in case the guest would like to review the ingredients.

Wash hands with soap and water. Use separate equipment and preparation space where possible. Otherwise, thoroughly clean the pan, cutting board, blender, surfaces and utensils with detergent and water, rinse, then sanitise as appropriate. A quick wipe is not enough.

Do not reuse oil in which an allergen has been cooked. The cooking oil itself must also meet the guest’s allergy requirements.

Do not rely on picking nuts or another allergen off after cooking. Separate serving spoons help at the table, but they cannot undo cross-contact that happened in the kitchen. Keep the guest’s portion covered and separate during serving, too.

If you cannot verify ingredients or prevent cross-contact, say so before the visit and agree another food plan with the guest. An honest ‘I cannot confirm this is safe’ is more useful than a confident guess.

Know when to act: Sudden swelling of the lips, mouth, throat or tongue, difficulty breathing or swallowing, or faintness after eating can signal a severe allergic reaction. If you suspect anaphylaxis, use the person’s prescribed adrenaline auto-injector immediately, following its instructions, and call 112 for emergency assistance in India. Help them lie down, on their left side if pregnant; if breathing is difficult, raise their shoulders or let them sit up slowly. Do not let them stand or walk. If symptoms have not improved after five minutes, use a second prescribed auto-injector if available. Follow their emergency plan and the emergency operator’s instructions; do not wait for the reaction to settle.

Build a Spread with Variety

A varied menu gives people room to choose according to preference and tolerance. Alongside the richer dishes, include a dal or pulse dish, a vegetable sabzi, something fresh such as kachumber, and a soft or steamed option such as idli or dhokla. Put plain water out from the start. Chaas can be another choice, but remember that it contains dairy and may also be salted.

This is more useful than declaring the entire spread ‘gut-friendly’. Curd, raw salad, chilli, onion, garlic, legumes and fried foods suit different people differently. Variety lets the guest decide without turning dinner into a consultation.

Keep curd, raita, chaas and other perishables chilled until serving, and refrigerate leftovers promptly. Do not leave perishable food out for more than two hours, or one hour if the temperature is above 32°C.

One Spread Can Offer Choices but Not Guarantees

A practical Diwali menu might include the following:

One fried starter and one steamed starter, with ingredients checked and labelled where needed.

A no-onion-no-garlic dish prepared that way from the beginning, using the guest’s confirmed ingredient rules.

A dal and a dry vegetable sabzi, with dairy-free or nut-free versions only where the ingredients and preparation meet the guest’s needs.

Rice and rotis for the main meal, plus a separately prepared vrat option only if a guest needs one and has confirmed what they eat during the fast.

Kachumber and plain fruit, with curd, raita and chaas served separately so their dairy content is clear.

One sweet rather than several near-identical choices, with the ingredients easy to check.

This spread offers choices; it does not automatically cover every guest. A strict religious observance, food allergy or medically required diet may need a separately prepared dish or advance confirmation. Describe ingredients and preparation clearly: a vegan label does not establish allergy safety, and neither does ‘no onion, no garlic’.

Cooking the no-onion-no-garlic dishes first can make separate preparation easier if that is what a guest needs. For an allergy, cooking first is not enough on its own. The equipment, surfaces, ingredients, oil and serving method all need attention.

Saunf Is a Tradition Not a Treatment

Saunf and mukhwas are familiar ways to finish an Indian meal, and some guests enjoy them. Clinical research on fennel preparations is limited, so a bowl of saunf should not come with a promise to relieve indigestion. Check the bowl before it goes out: mukhwas can contain sugar, nuts, sesame, coconut or other ingredients that matter to guests.

The Honest Takeaway

Being a thoughtful host does not mean producing a separate thali for every person. Ask about allergies, fasting and ingredients in advance, make a varied spread, label what matters, and be honest about what you can and cannot safely provide. Cultural practices vary, while food allergies require careful ingredient checks and cross-contact control. When in doubt, ask the guest instead of deciding for them.

Sources

Young Jains of America: FAQs on Jain food practices

Gupta L et al.
