Cooking does not create extra protein, but it can make the protein easier for the body to digest and absorb.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">In a <a href=\"https:\/\/lirias.kuleuven.be\/157072\">1999 study of 10 healthy volunteers<\/a>, researchers estimated that about 94% of the protein in a cooked egg test meal was digested and absorbed in the small intestine, compared with about 65% from the same meal served raw. These are averages from a small study, rather than guaranteed absorption figures for every person or cooking method.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Raw egg white also contains avidin, a protein that binds the B vitamin biotin and interferes with its absorption. The <a href=\"https:\/\/ods.od.nih.gov\/factsheets\/Biotin-HealthProfessional\/\">US National Institutes of Health<\/a> notes that cooking deactivates avidin.
