This piece is about the other side: what a meal that the gut reads as comfortable, sustained and satisfying usually looks like, why each element earns its place, and how the traditional Indian plate arrived at this logic without knowing the word fibre.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><span class=\"ez-toc-section\" id=\"In_This_Piece\"><\/span><strong>In This Piece<\/strong><span class=\"ez-toc-section-end\"><\/span><\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">We\u2019ll look at the five elements that consistently show up in meals that feel good in the gut \u2014 a whole grain, a dal or pulse, a vegetable, something fermented or a fruit, and water \u2014 and what each one contributes specifically rather than generically. We\u2019ll also look at the one thing that isn\u2019t on the plate but shapes the gut\u2019s experience of it as much as anything that is: the pace at which it\u2019s eaten. What matters from a gut perspective is that the grain is whole rather than refined: the bran intact, the fibre present, the slow release of energy that maida or very polished rice can\u2019t provide. A whole-grain roti from a quality whole wheat atta, or whole-grain rice, or a millet-based preparation, gives the gut something to work with across the two to three hours that follow.
