And yet, every monsoon \u2014 or every time someone gets an upset stomach \u2014 street food is usually the first thing to be blamed. Is that fair? Not entirely.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Meet Ranjit. He has a favourite chaat stall near his office that he\u2019s been visiting for four years. He knows the vendor by name, the turnover is brisk, everything is cooked fresh to order. He\u2019s never once had a problem there. Last week, on a different route home, he stopped at a new stall \u2014 fruit chaat that looked appealing, sitting in a bowl that was clearly not fresh. He thought nothing of it. The next morning told a different story.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Ranjit\u2019s week illustrates the point more precisely than any generalisation: the stall he trusts hasn\u2019t made him sick in four years. The one he tried once did. That\u2019s not street food being bad for your gut. But foodborne illness is usually linked to contamination \u2014 unsafe water, poor hand hygiene, improperly stored ingredients, or food left at unsafe temperatures for too long. That\u2019s a food safety issue, not a street food issue as a category.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The variables that actually matter: whether the food was cooked fresh, whether it was kept at a safe temperature, whether the water used in preparation was safe, and whether there was good hygiene in how it was handled. A vendor who maintains all of these well can be safer than a home kitchen that doesn\u2019t.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">There\u2019s also a less obvious culprit. Sometimes the issue isn\u2019t the food at all \u2014 it\u2019s everything around it. You skipped breakfast, didn\u2019t drink much water, walked around in the heat, then ate a very spicy meal quickly because you were hungry. Later that evening, your stomach felt uncomfortable. Was it the street food? Maybe. Or maybe it was the combination of hunger, dehydration, eating too fast, and the meal itself. Cooked food shouldn\u2019t sit at room temperature for more than two hours. Keep food properly hot (above 60\u00b0C) or properly chilled (below 5\u00b0C). Use safe water for both drinking and food preparation. When eating out, the FSSAI Hygiene Rating Scheme \u2014 a 1 to 5 score now displayed at many eateries and increasingly on delivery platforms \u2014 is a quick, practical way to choose more carefully. For street vendors, FSSAI\u2019s Eat Right India programme has also been rolling out hygiene training and certification, making certified vendors a meaningfully safer option in peak monsoon.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">That doesn\u2019t mean you have to avoid street food for four months. High turnover means food doesn\u2019t sit long enough to become a problem.<\/li>\n\n\n\n<li>Are the ingredients covered when not in use? Uncovered cut fruit or chutneys sitting open in the heat are higher-risk than anything cooked fresh to order.<\/li>\n\n\n\n<li>Does the vendor practise clean food-handling \u2014 gloves, tongs, clean hands? Not aesthetics, but actual hygiene.<\/li>\n\n\n\n<li>Is safe water being used? This matters particularly for chutneys, drinks, and anything prepared with water that isn\u2019t being boiled or filtered.<\/li>\n\n\n\n<li>Is the stall busy? High footfall generally means high turnover, a useful proxy for freshness.<\/li>\n\n\n\n<li>Is the FSSAI Hygiene Rating visible? A 4 or 5 is meaningful; use it when it\u2019s available.<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">And if something doesn\u2019t look or smell right, trust your instincts.
