Jowar, common across much of central and western India, makes a denser, slightly crumblier roti or bhakri, often eaten with a generous amount of ghee or oil to help bind it. Bajra, popular especially in Rajasthan and parts of Gujarat, makes a hearty, dense roti traditionally paired with jaggery and ghee in winter months.
