This isn&#8217;t about avoiding ghee or oil altogether \u2014 they&#8217;re part of how Indian food is meant to taste, and a reasonable part of a balanced diet, with total fat ideally kept under about 30% of daily energy and weighted towards unsaturated fats. It&#8217;s about noticing when a particular day&#8217;s meal leans more oily than usual, rather than assuming the roti changed. Was the sabzi oilier than it normally is? Was lunch eaten in ten rushed minutes instead of twenty unhurried ones? Was it a later dinner than usual, eaten close to lying down? Was there water nearby, or had the day been generally low on fluids? Regular whole wheat atta isn&#8217;t inherently &#8216;heavy&#8217; or hard to digest on its own. Thursday: three rotis, a richer, more oil-heavy paneer dish, eaten in ten minutes between tasks, finished at 10 pm, with little water through the day. Same roti, same atta, same person \u2014 and almost certainly two very different post-meal experiences.
